Luncheon at Hereford House
Some of the ladies of CPV had a great outing at the Hereford House on November 10. Dixie took pictures with her new phone and hopes to figure out why they are blurry.
I was sorry to miss the luncheon but this was my view that evening! Joe and I were in Puerto Vallarta, Mexico for the week and the weather was perfect.

Toffee Recipe
Saltine Cracker Toffee
40 salted saltine crackers or enough to line your pan
1 cup unsalted butter
1 cup packed brown sugar
2 cups milk chocolate or semisweet chocolate chips
(optional) 3/4 cup chopped pecans
You can either use salted butter or salted saltines but not both. I used salted crackers and unsalted butter.
Preheat oven to 400 degrees and line a cookie sheet with aluminum foil or parchment paper. Line saltine crackers in a single layer on the cookie sheet.
In a small pot, combine sugar and butter and bring to a boil. Once mixture is at a boil, continue boiling for 3 minutes. Mixture should be a deep caramel color. Immediately pour over saltines and spread to cover crackers completely.
Bake at 400 degrees for 5 to 6 minutes. It will get all bubbly. Remove from oven and sprinkle chocolate chips over the top and let sit a couple minutes to melt. Spread melted chocolate and top with chopped nuts if desired. Cool completely and break into pieces.
I put mine in the refrigerator for a little to hasten up the chocolate hardening.

Community Picnic - Oct. 23, 2011
Below is a picture from the September Ladies Luncheon at Barley's.



We had our Community Picnic Sunday, October 23, welcoming new residents, DeAnn Warner and Diane and Terry Showalter. We also took this opportunity to express our sincere thanks to Dixie and Bob for creating and continuing to participate in our community. The weather, food and fellowship were great.
